How Sam's Pizza Keeps Every Outlet Looking as Fresh as the Dough They Make Twice a Day

The Client

Sam's Pizza was born in 1999 from a very specific observation: Indians loved pizza, but the MNCs selling it had priced it out of reach and hadn't quite figured out the Indian palate. Dr. Kailash Goenka, already the force behind the South Indian restaurant chain Sankalp, saw a gap and filled it with something no one else was offering: unlimited pizza, 30+ varieties of salads, garlic bread, soup, and brownie, all at a price that made sense for everyday dining.

The name itself tells the story. "Sam's" is inspired by American soldiers who fell in love with Italian food, took it home, and made it their own, turning simple hand-tossed pizza into deep-pan and thin-crust versions that became American staples. That same spirit of taking something great and making it more accessible, more flavourful, more yours, runs through everything Sam's Pizza does.

More than two decades later, Sam's Pizza operates 29 outlets across India, with franchise expansion actively underway. The unlimited dining model is still the cornerstone, and freshness is non-negotiable; the kitchen makes dough twice a day and would rather close early than serve a base that's past its prime.

The Challenge

It's a challenge to run a restaurant that promises freshness and variety. It's another problem entirely to have to run 29 of them while keeping all the outlets the same.

The menu at Sam's Pizza is not a static list! It's a fancy menu: thin-crust, thick-crust, cheese burst, pan-Asian, and American salads; soups; garlic bread; brownies; and some menu items may vary from outlet to outlet, season to season, and promotional day to promotional day. Without a centralized system, each in-store outlet had to handle its own communication, with displays varying across stores and locations.

The unlimited dining model attracts groups, families, and repeat customers who are well aware of their meals. New customers, walk-ins, and visitors who don't know about the spread are entirely dependent on what they see in the store when making decisions. If the display is not appealing, it is not the experience the brand has built over 25 years; if it is simply incorrect, it undermines the experience the brand has been creating.

The quality control at Sam's Pizza is real, too, both internally, with 100+ benchmarks, and in the kitchen, with a daily “freshness” standard. But their in-store content was not the same; it was static, and there was no way to send updates from store to store without physically updating each store.

As the number of franchises continued to grow, the lack of a centralized content system became a concern. New franchise owners required an effective method to showcase the correct menu, promotions, and brand identity, all without relying on printed materials that would be “outdated” as soon as anything was altered.

The Solution

The digital signage solution Disploy was deployed at Sam's Pizza to control what appears on in-store screens across the network. They wanted to take the same level of accuracy to their screens that they do in the kitchen.

  5. As the franchise expands, so does the need for brand consistency. Every new outlet will be connected to Disploy, delivering the same energy, menu structure, and brand that customers at 29 outlets already recognize and trust.

The Results

  • Now everything is managed in one place for content throughout the outlet network. What used to take an hour or more at each location takes a few minutes now, centrally, without a person visiting the location.

  • The franchise rollout is streamlined. New outlets that are up and running with screens configured, already on brand, and connected to the central dashboard from day one.
  • The recurring costs of designing, printing, and distributing new display materials have been eliminated. All content changes are digital and instant, and they do not require the print cycle, which previously consumed time and money for every change.
  • Daypart scheduling involves showing different audiences content relevant to their age group without requiring the on-the-ground team's effort.
